Sweet Potato Casserole

What is Thanksgiving without Sweet Potato Casserole? I know my sister-in-law would lock me out if I didn’t bring this dish with me! And today I’ll share it with you.

Ingredients:

  • 3 cups mashed sweet potatoes (3 to 4 regular)
  • 2 cups sugar
  • 1 stick butter (melted)
  • 4 eggs
  • 1 cup evaporated milk
  • 1 teaspoon vanilla

 

Mix hot potatoes with butter. Add remaining ingredients above and mix well. Pout into a 9 x 13 pan and top with topping (listed below).

Topping:

  • 1/2 cup chopped pecans
  • 1/4 cup flour
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1/2 cup coconut
  • 1/2 cup sugar
  • 1/2 stick butter (melted)

Mix all ingredients  and sprinkle over hot potato mixture. Bake in 350 degree oven until potatoes are set (approximately 1 hour).

Note : Half recipe is plenty for 6 to 8 people.

I double this recipe for Thanksgiving and use a huge glass casserole dish. Since I travel five hours on that day, I make the potato mixture and cook it without the topping the night before. Let it cool and refrigerate until we leave. I then store it over ice while we drive. I heat it in the microwave when we get to our family’s home until it’s warmer than room temperature. Then place the topping over it and heat in an oven for a good 20 to 30 minutes at about 350 – until the topping is crusty and the filling is HOT. Serve and enjoy!
